There are two kinds of people in this world: those who love “cakey” brownies vs. those who adore “fudgy” brownies. And for those who don’t like brownies at all? Well, those can’t be real people, because… BROWNIES. C’mon.
This recipe makes the most chocolaty, light, and moist cakey brownies! Sorry, fudge fanatics… you’ll need to get your brownie fix elsewhere, unless you’re willing to branch out and try something new.
Beware, these brownies are also double chocolate, so there is NO escaping the gooey cocoa goodness that will inevitably (read: thankfully) get all over your fingers while you eat them.
Oh, and did I mention that they’re flourless??
Indeed, you can now have your cake[y brownies] and eat it, too! The ingredients are simple, as are the instructions; it’s every lazy brownie lover’s recipe dream. Put everything in a bowl, mix, and bake. That’s about as easy as healthy and homemade gets! Just make sure you wait to stir in the baking soda until right before you pop the pan in the oven, so that the CO2 bubbles can work their magic as it bakes.
All joking aside regarding the addiction that these brownies are capable of causing, you definitely want to share the love when you make these. Don’t eat them all at once, or all by yourself for that matter! Have one (okay, or two!), but share the rest with family, friends, or coworkers! As far as your personal health goes, remember that even “healthy” brownies like these should only be enjoyed as a once-in-a-while treat. This is especially true if you’re trying to lose weight or reduce your sugar intake.
In fact, the flavor and texture of these brownies are so magical that I’m willing to bet your non-Paleo family and friends wouldn’t even realize that they don’t possess an ounce of refined sugar, dairy, or grains. Try it out – spring them on some unsuspecting co-workers! You’ll see… People will just nomz away, telling you how moist and delicious they are, licking chocolate off their fingers… and to think how much better you’re going to make them feel about their “cheat treat” for the day (silly dieters) when you inform them that these are made of only REAL food and likely the healthiest brownies they’ll ever eat in their lifetime. High five!
And if you’re just making these for yourself? Well, then you’re in good company, because that’s what I did. Just store them in the fridge so they last longer than two days.

- 1 tsp coconut oil, for greasing
- ½ cup creamy almond butter
- ¼ cup honey
- 2 eggs
- 2 tbsp ghee
- 1 tsp vanilla extract
- ⅓ cup cocoa powder
- ½ tsp baking soda
- 1 handful of chocolate chips (such as Enjoy Life's Mega Chunks)
- Preheat the oven to 325 degrees F. Grease an 8x8” glass dish with the coconut oil.
- In a large bowl, combine the almond butter, honey, eggs, ghee, and vanilla. Whisk until thoroughly combined.
- Right before you put it in the oven, stir in the cocoa powder, baking soda, and chocolate chips.
- Use a silicone spatula to scrape down the sides of the bowl, and pour the batter into the greased dish.
- Bake for 24 to 26 minutes.
- Remove from oven and let cool for at least 20 minutes before cutting.
- Store in an airtight container at room temperature for up to 2 days.
